Raisins are produced through the sun drying and tray drying of various grape varieties. These small, sweet fruits have a wrinkled texture and are available in different sizes and colours in India. Raisins retain the flavour of the grapes from which they are made, but the drying process concentrates their natural sugars, resulting in a much sweeter taste. Due to their low moisture content, raisins are naturally stable and resistant to spoilage.
The primary raw material for making raisins is grapes. Famous grape varieties used for raisin production include Thompson Seedless, Sonakka, and Rudstalk.
Maharashtra holds the top position in terms of grape production, accounting for over 75% of the total production in the country and achieving the highest productivity. Bunches of grapes are carefully handpicked by field workers, dipped in a potassium carbonate solution, dried on trays, and then sprayed with dehydration oil. The dried raisins then undergo a cleaning, grading, sorting, and packing process.
